Tofu & Veggie Noodle Stir-Fry


Freshen up take--out night with this healthy alternative: oodles-of-noodles cuddling crisp tofu and veggies coated in a light but robust sauce.

What you will need:

Sauce:

1 Tbsp. Sesame Oil

2 Tbsp. Teriyaki Sauce

1 Tbsp. Soy Sauce

4 Tbsp. Water

1 Tbsp. Sugar

Tofu & Veggies Noodles:

1 Box Asian-style noodles

1 Tbsp. Sesame Oil

2 Cups Broccoli

1 Block Firm Tofu

1 Large Onion, sliced

2 Garlic Cloves, minced

1 Cup Bok Choy

Directions:

1) Add sesame oil to wok or skillet on medium-high. Mix in Teriyaki sauce, soy sauce, water, sugar. Heat for one minute and set aside.

2) Drain and dry tofu. Cut into cubes

3) Cook noodles according to package instructions.

4) Heat sesame oil on medium-high and add tofu and onion. Cook until tofu browns a bit on each side.

5) Meanwhile, steam broccoli and Bok Choy lightly

6) Add broccoli, Bok Choy, and garlic to the tofu and onions.

7) In a separate bowl, mix together the contents of the skillet and the noodles.

8) Optional: Garnish with black and white sesame seeds and fresh scallions
