Multi-Grain Tabbouleh

Healthy Vegan Multi-Grain Tabbouleh Recipe

Make your own tabbouleh at home with this easy and healthy recipe.

 

What you will need:

2 tsp Salt (divided)

1/2 Cup Parsley, chopped

2 Cups Grape Tomatoes, quartered

1 and 3/4 Cup Trader Joe's Harvest Grains Blend (this is a combination of Israeli couscous, orzo, baby garbanzo beans, and red quinoa. You can also use a different combination of grains of your choosing)

1 Cap Chickpeas

3 Cloves Garlic, chopped

1/2 Red Onion, chopped

1 Small Cucumber, gutted and cubed

 

Directions:

1) Mix 1 tsp salt with the chopped parsley. Put a paper towel over a large plate and place parsley on top. Mix 1 tsp salt with quartered cherry tomatoes and place in a strainer. Let the parsley and tomatoes sit for about 20 minutes. This will help to try out the parsley and tomato so that the tabbouleh does not get soggy.

2) Cook the grains according to package directions.

3) Drain the chickpeas and run under water until all of the bubbles are gone.

4) Combine the cooked grains with garlic, red onion, cucumber, chickpeas, parsley, and tomatoes in a large bowl and mix.
